Transform Christmas fruit cake leftovers into a delectable slice.
Ingredients:
  • 150g butter, at room temperature
  • 99.00 gm icing sugar
  • 437.50 ml plain flour, sifted
  • 50.00 gm ground almonds
  • 400g can pie apple
  • 300g leftover fruit cake, crumbled
  • Thick cream, to serve
Instructions:
  • Preheat your oven to 180°C (160°C for fan ovens) and generously grease and line a 20cm square pan with baking paper, ensuring it overhangs the sides.
  • Cream together the butter and icing sugar with an electric mixer until creamy. Mix in the flour and almonds until a crumbly mixture forms.
  • Set aside 1 cup of crumble. Press the rest into the pan. Place apple on top. Combine fruit cake with the reserved crumble. Sprinkle over the apple. Bake for 35 minutes until golden. Allow to cool in the pan.
  • Serve the dish in square portions accompanied by a dollop of rich cream.
