Delicious apricot crumble cake bursting with fresh fruit flavor - simple and moist.
Ingredients:
  • 0.5 cup unsalted butter, softened
  • 2.5 cups self-rising flour
  • 1.25 cups milk
  • 1 teaspoon white vinegar
  • 6 fresh apricots, pitted and halved, or more to taste
  • 1 cup all-purpose flour
  • 0.75 cup superfine (castor) sugar
  • 0.5 cup salted butter, softened, cut into cubes
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 7x11-inch baking dish by greasing it and lining it with parchment paper.
  • Using an electric mixer, combine white sugar, butter, and eggs in a bowl. Stir in self-rising flour, milk, vinegar, and vanilla extract. Pour mixture into prepared dish and top with apricots, pitted-sides down.
  • In a bowl, combine all-purpose flour, superfine sugar, and cubed butter. Use your fingertips to blend the butter into the flour and sugar until crumbly. Sprinkle the topping evenly over the apricots.
  • Bake in the preheated oven for approximately 40 minutes or until golden and a toothpick inserted into the center comes out clean.
