Indulge in a cozy, diabetic-friendly fruit crumble to sweeten winter nights.
Ingredients:
  • 1 wheat cereal biscuit, crushed
  • 50.00 gm traditional rolled oats
  • 125.00 ml wholemeal plain flour
  • 45.00 gm firmly packed brown sugar
  • 2.50 gm mixed spice
  • 62.50 ml chopped pistachio kernels
  • 62.50 gm extra-light canola spread
  • 1kg tub apricot halves in natural juice, drained
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a 6 cup-capacity ovenproof dish.
  • In a bowl, mix together cereal, oats, flour, sugar, mixed spice, and pistachios. Add the spread and use your fingertips to rub it into the mixture until it resembles breadcrumbs.
  • Arrange the apricot in the prepared dish and generously sprinkle with the biscuit mixture. Bake in the oven for approximately 25 minutes, or until beautifully golden brown. Serve warm and enjoy!
