Inventive Home Chef's Unverified Recipe
Ingredients:
  • 750.00 ml plain flour
  • 1 tsp nutmeg (optional)
  • 100g butter, melted
  • Plain flour, extra
  • 1 large can halved apricots in natural juice
  • 7.50 gm cornflour
  • 70.95 gm caster sugar
Instructions:
  • Preheat oven to 375F.
  • Combine the base ingredients using your hands until the mixture holds together well without being too crumbly.
  • Press 2/3 of the mixture evenly into a medium-size lined slice tray. Bake in the oven for 10 minutes until golden brown.
  • Reserved the extra base mixture for sprinkling on top of the slice.
  • Prepare the filling by draining most of the liquid from the can of apricots after removing them.
  • Combine apricots, sugar, and cornflour in a mixing jug. Use a hand blender to blend until smooth.
  • After 10 minutes, remove the slice base from the oven and generously spread apricot liquid over it. Place the tray back in the oven and bake for another 10 minutes, or until the topping is bubbling.
  • Use your fingers to create a crumbly texture with the base mix, adding more flour if needed.
  • Sprinkle the apricot topping over the dish and bake for another 10 minutes until the crumbs are golden and crispy.
