Apple crumble slice

Transformed classic apple pie into irresistible slices with a touch of magic!
Ingredients:
  • 250.00 ml plain flour
  • 75.00 gm self-raising flour
  • 65.00 gm cornflour
  • 70.95 gm caster sugar
  • 125g butter, chilled, chopped
  • 1 egg
  • 62.50 gm iced water
  • 1.4kg apple
  • 21.00 gm lemon juice
  • Icing sugar mixture, for dusting
  • 59.40 gm brown sugar, firmly packed
  • 2.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 165.00 ml plain flour
  • 60g butter, chopped
  • 165.00 ml slivered almonds
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, leaving a 5cm overhang on all sides.
  • Combine flours, sugar, and butter in a food processor and blend until fine crumbs form. Add egg and water, and process until pastry dough comes together. Press the pastry evenly over the base and sides of a pan using floured hands. Chill in the refrigerator for 20 minutes. Line the pastry with baking paper, fill with baking weights or uncooked rice, and blind-bake for 14 minutes until edges are lightly golden. Remove weights or rice and paper, then bake for another 8 minutes until light golden.
  • In a large saucepan, combine apples and 1/2 cup water. Boil over medium-high heat, then reduce to medium-low, cover, and simmer for 10 minutes until apples are tender but still firm. Drain and toss with lemon juice in the same pan to coat.
  • For the almond crumble, start by mixing sugar, baking powder, and cinnamon in a small bowl. Next, put flour in a large bowl. Use your fingertips to blend butter into the flour until it looks like coarse breadcrumbs. Then, add the sugar mixture and almonds and stir until combined.
  • Preheat the oven to 200C/180C fan-forced. Fill the pastry case with the apple mixture, top it with crumble, and bake until golden, approximately 30 minutes. Let it cool for 30 minutes, dust with icing sugar, cut into pieces, and serve.
