Creamy Waldorf salad in apple cup for a fun starter.
Ingredients:
  • 4 red apples
  • 21.00 gm fresh lemon juice
  • 1 celery stick, thinly sliced, plus leaves to serve
  • 40g (1/4 cup) green grapes, halved
  • 40g (1/4 cup) red grapes, halved
  • 30g (1/4 cup) walnuts, toasted, chopped
  • 39.60 gm mayonnaise
Instructions:
  • Remove the tops from 4 red apples using a melon baller to hollow out a 7mm thick shell, discarding the core and coarsely chop the flesh and tops.
  • Mix diced apple, celery stalk, grapes, and walnuts in a bowl.
  • Combine creamy mayonnaise with zesty lemon juice in a small bowl until perfectly smooth. Gently incorporate into the fresh apple mixture.
  • Fill apple shells with mixture and garnish with small celery leaves before serving.
