Indulge in a creamy apple cake bursting with cinnamon aroma, accented with a tangy twist of cream cheese for a moist and delectable treat. Serve warm for a gooey delight or chilled for a comforting dessert alongside a cup of tea.
Ingredients:
  • 125g butter, at room temperature
  • 100g (1/2 cup) caster sugar, plus extra 3 tsp for sprinkling
  • 225g (1 1/2 cups) self-raising flour
  • 75g (1/2 cup) plain flour
  • 160ml (2/3 cup) milk
  • 820.00g can pink lady apples slices, drained, roughly chopped
  • 250g cream cheese, chopped, at room temperature
  • 70g (1/3 cup) caster sugar
Instructions:
  • Preheat your oven to 180C (160C fan forced). Grease a 22cm springform pan and line the base with baking paper.
  • Beat cream cheese, sugar, and vanilla with electric beaters until smooth. Set aside.
  • Beat butter and sugar until pale and creamy with clean beaters. Add eggs one at a time, beating well after each addition, then mix in vanilla. Sift flours together. Fold in half of the flour mixture and half of the milk, then fold in the rest of the flour mixture and milk. Transfer 2/3 of the batter to the pan and spread evenly.
  • Spread the cream cheese mixture over the batter using the back of a spoon to make an even layer. Add the apple on top, then spread the remaining batter evenly. Finish by sprinkling with a mixture of extra caster sugar and cinnamon.
  • Bake the cake for 40 minutes or until it's risen and golden brown. Let it cool in the pan for 15 minutes, then transfer to a wire rack before serving.
