Indulge in a decadent raw apple cake with luscious cream cheese frosting. Unbeatable flavor!
Ingredients:
  • 0.75 cup vegetable oil
  • 2 large eggs
  • 3 cups finely chopped Granny Smith apples
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon milk, or more as needed
  • 1 pinch salt
  • 2.5 cups confectioners' sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while preparing a 9x13-inch baking pan by greasing and flouring it.
  • Combine oil and eggs in a bowl and whisk until well blended. In a separate bowl, place the apples, and pour the oil-egg mixture over them. Allow it to sit while preparing the dry ingredients.
  • In a separate bowl, combine flour, sugar, baking soda, salt, cinnamon, and nutmeg. Slowly mix the flour mixture into the apple mixture until a thick, well-combined batter forms. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for about 45 minutes, until a toothpick inserted in the center comes out clean. Then, cool completely before serving.
  • Once the cake has cooled, prepare the frosting by combining cream cheese, 1 tablespoon of milk, vanilla, and salt in a mixing bowl. Gradually add confectioners' sugar and continue beating until smooth. Adjust consistency by adding more milk, 1 tablespoon at a time, as needed.
  • Smooth a generous layer of frosting onto the cooled cake.
