Delicious streusel cake made with Stevia In The Raw for a healthier twist on classic apple pie.
Ingredients:
  • 2.5 cups all-purpose flour
  • 3 teaspoons cinnamon, divided
  • 1.5 cups cold butter, cut into pieces
  • 5 medium tart apples - peeled, cored, and thinly sliced
  • 0.25 cup Stevia In The Raw®
Instructions:
  • Preheat oven to 350°F.
  • Combine flour, brown sugar, and 2 tsp. cinnamon in a large bowl of a food processor fitted with a blade attachment. Pulse until thoroughly mixed. Slowly add butter, pulsing until pea-sized pieces form. Press half of the mixture into an ungreased 9-inch springform pan, and keep the rest aside for later use.
  • Combine apples, Stevia In The Raw®, cornstarch, and 1 teaspoon cinnamon in a large bowl. Transfer mixture to prepared springform pan and evenly sprinkle the remaining mixture over the apples.
  • Position the springform pan on a rimmed baking sheet. Bake for 60 to 70 minutes until the top is beautifully golden. Take the pan out of the oven. Gently slide a knife along the edge of the pan; allow the cake to cool thoroughly. Unlatch the springform ring just before serving.
