Low-Fat Apple Spice Muffins

Delicious apple muffins made with whole grain flour, egg whites, raw sugar, and warm spices. Ready in under an hour.
Ingredients:
  • 1 cup whole wheat pastry flour
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 0.25 teaspoon ground ginger
  • 2 large egg whites
  • 0.66666668653488 cup skim milk
  • 0.66666668653488 cup nonfat plain yogurt
  • 1 cup raw sugar
  • 1 tablespoon canola oil
  • 0.25 teaspoon vanilla extract
  • 1 cup chopped peeled apple
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat 12 muffin cups with cooking spray.
  • In a large bowl, mix together whole wheat pastry flour, all-purpose flour, baking soda, salt, cinnamon, nutmeg, allspice, and ginger until well combined. Create a well in the center of the dry ingredients using your fingers.
  • Combine egg whites, skim milk, yogurt, raw sugar, canola oil, and vanilla extract in a bowl, whisk until smooth, then fold in the chopped apple.
  • Combine the liquid ingredients with the dry ingredients to create a thick batter.
  • Gently fill the muffin cups up to about 2/3 full with the prepared batter.
  • Bake the muffins in the hot oven until they are golden brown and a toothpick inserted into the center of a muffin comes out clean, for about 25 to 30 minutes.
  • Allow the muffins to rest in their cups for 5 minutes before transferring them to wire racks to cool completely.
