Indulge in a scrumptious apple dumpling cake - a delightful baked treat.
Ingredients:
  • 2/3 cup packed brown sugar
  • 8 small Gala apples, peeled, halved lengthwise
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons apple pie spice
  • 1 cup butter or margarine, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 3/4 cup milk
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch pan with shortening or cooking spray. In a small bowl, thoroughly combine brown sugar and 1/2 cup melted butter. Spread the mixture evenly in the pan. Use a melon baller to remove apple cores. Arrange 15 apple halves, cut side down, over the sugar mixture in the pan. Bake for about 15 minutes or until bubbly around the edges.
  • In a small bowl, combine flour, baking powder, apple pie spice, and salt. In a medium bowl, cream together 1 cup of butter and granulated sugar using an electric mixer until light and fluffy, approximately 3 minutes. Mix in vanilla extract. Add eggs one at a time, beating well after each addition. Gradually blend in the flour mixture and milk on low speed. Spoon the batter over the hot apples in the pan.
  • Bake for 40 to 45 minutes, or until apples are tender and a toothpick inserted in the center of the cake comes out clean. Let it cool for 5 minutes, then loosen the cake by running a knife around the edge of the pan. Invert a heatproof serving plate onto the pan, flip both over, and allow the pan to sit for 1 minute to let the topping drizzle over the cake. Remove the pan and cool for another 10 minutes before cutting the cake into squares around the apples.
