Apple fritters with cinnamon ice-cream

Irresistible apple fritters with a crisp cinnamon-sugar coating.
Ingredients:
  • 4 green apples (such as Granny Smith)
  • 42.00 gm lemon juice
  • 150g plain flour
  • 5.00 gm caster sugar
  • Sunflower oil, for deep-frying
  • Icing sugar, to dust
  • Cinnamon (see note) or vanilla ice-cream, to serve
Instructions:
  • Peel and core the apples, then slice them into 1cm-thick rings. Mix with lemon juice and let it rest.
  • In a bowl, combine flour, bicarbonate of soda, caster sugar, and a pinch of salt. Gradually whisk in chilled water, up to 1/3 cup (80ml), until you achieve a smooth, thick batter. Set aside.
  • Fill a deep-fryer or large saucepan halfway with oil and heat to 190°C. (To test without a thermometer, drop a cube of bread - it should turn golden in 30 seconds if the oil is ready.)
  • Coat apple rings in batter, shake off excess, and fry in batches until golden on both sides. Drain on paper towel and keep warm in a low oven as you finish frying.
  • Sprinkle with powdered sugar and enjoy with a scoop of ice cream.
