Indulge in crispy apple fritters, paired with creamy vanilla ice cream and drizzled in salted caramel sauce.
Ingredients:
  • Vegetable oil, to shallow-fry
  • 150g self-raising flour
  • 1.25 gm ground ginger
  • 0.63 gm bicarbonate of soda
  • 250ml ginger beer
  • 75g caster sugar
  • 2.50 gm ground cinnamon
  • 3 apples, cored, cut into 1cm-thick slices
Instructions:
  • Warm the oil in a spacious deep frying pan on medium-high heat.
  • In a large bowl, mix together flour, ginger, and bicarbonate of soda. Pour in ginger beer and whisk until the batter is smooth.
  • Mix the sugar and cinnamon in a wide bowl.
  • Take a quarter of the apple slices and coat them lightly in the batter. Place them carefully in the hot oil in a single layer. Fry for 2 minutes or until they turn light golden. Flip them over and fry for 1 minute until crispy. Transfer to a plate lined with paper towels using a slotted spoon. Toss them in the sugar mixture until lightly coated. Place them on a serving plate. Repeat with the remaining apples and batter in three more batches.
