Apple Funnel Cake Hand Pies

Enhance fruit filling with dried apples for easier frying in these delicious hand pies inspired by funnel cakes.
Ingredients:
  • 1.5 cups finely chopped, peeled tart apples
  • 0.33333334326744 cup packed brown sugar
  • 2 tablespoons lemon juice
  • 0.75 teaspoon ground cinnamon
  • 0.75 cup chopped dried apples
  • 1 recipe Buttermilk Dough for Fried Fruit Pies, chilled
  • 2 cups canola oil for frying, or more as needed
  • 1 tablespoon confectioners' sugar, or as needed
Instructions:
  • Combine fresh apples, brown sugar, lemon juice, and cinnamon in a small saucepan over high heat. Bring to a vigorous boil, stirring continuously. Cook until apples begin to soften, approximately 8 minutes. Add dried apples and let cool completely.
  • Allow the chilled dough to rest for 30 minutes while preparing a drying rack with paper towels on top of a baking sheet.
  • Gently sprinkle flour on your work surface and roll the dough into a 12x16-inch rectangle that is about 1/8-inch thick. Using a round cutter, cut out twelve 4-inch circles. Spoon 2 tablespoons of apple mixture onto the center of a circle. Carefully fold the circle in half, ensuring the filling is in the middle. Press the edges together firmly and use a floured fork to seal them completely. Repeat this process with the remaining filling and dough.
  • In a 10-inch cast-iron skillet or a similar deep, heavy skillet, heat 1 inch of oil until it reaches 350 degrees F (175 degrees C).
  • Gently place 3 pies in the oil and fry at 350 degrees F, turning every 30 seconds for about 3 minutes until golden brown and crispy. Drain on paper towels, cool briefly, then generously dust with confectioners' sugar.
