Apple cider-infused funnel cakes with a hint of cinnamon offer a delightful spin on the classic fair snack.
Ingredients:
  • 1 cup vegetable oil, or as needed
  • 0.25 cup confectioners' sugar
  • 0.75 teaspoon ground cinnamon, divided
  • 1.25 cups all-purpose flour
  • 0.75 cup apple cider
  • 1 teaspoon baking powder
  • 0.125 teaspoon salt
Instructions:
  • Add a luxurious layer of oil about 3/4 inch deep in a 12-inch skillet and bring it to a gentle heat at 325 degrees F (165 degrees C).
  • In a bowl, mix confectioners' sugar and 1/4 teaspoon cinnamon. In a separate large bowl, combine flour, apple cider, egg, baking powder, vanilla extract, 1/2 teaspoon cinnamon, and salt until the batter is smooth. Pour the batter into a funnel with a narrow spout or a squeeze bottle, covering the opening with a clean finger.
  • Pour batter into the hot oil in a spiraling motion to create a 6-inch cake; fry until golden brown, approximately 5 minutes on each side. Place the cake on a paper towel-lined plate and dust with confectioners' sugar mixture.
