Apple mint triangles

Elevate classic apple pie with a refreshing mint twist and rich molasses notes.
Ingredients:
  • 1 x 425g can apple pie fruit
  • 20.00 gm caster sugar
  • 2 tsp finely chopped fresh mint
  • 2 sheets (25 x 25cm) ready-rolled frozen puff pastry, just thawed
  • 1 egg, lightly whisked
  • 8.60 gm demerara sugar
  • Custard, to serve
Instructions:
  • Preheat the oven to 220°C and line 2 baking trays with non-stick baking paper. In a small bowl, mix together the apple, caster sugar, and mint. Place the pastry on a clean work surface and cut each sheet into 4 triangles diagonally.
  • Place a generous amount of apple mixture in the center of each pastry triangle. Gently brush the pastry edges with a touch of water. Fold each triangle in half to cover the filling, using a fork or your fingertips to seal the edges securely. Arrange the triangles on the baking trays.
  • Brush each triangle with a delicate egg wash and generously sprinkle demerara sugar on top. Bake in a preheated oven until beautifully golden and puffed, for 15-18 minutes. Once done, take out of the oven and enjoy these delectable triangles warm or cold with a side of custard, if desired.
