Stock up on seasonal apples for delicious pie filling that can be frozen for year-round enjoyment.
Ingredients:
  • 18 cups thinly sliced apples
  • 3 tablespoons lemon juice
  • 10 cups water
  • 4.5 cups white sugar
  • 1 cup cornstarch
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Place the apples in a large bowl and gently coat them with fresh lemon juice, ensuring they're evenly covered. Set aside for the next step.
  • In a Dutch oven over medium heat, pour water. In a bowl, combine sugar, cornstarch, cinnamon, salt, and nutmeg. Add mixture to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
  • Add in the apples and bring to a boil again. Lower the heat, cover the pot, and let it simmer until the apples are tender, which should take about 6 to 8 minutes. Allow it to cool for 30 minutes.
  • Divide the mixture into 5 freezer containers, making sure to leave a 1/2 inch of space at the top. Allow it to cool at room temperature for no more than 1 1/2 hours.
  • Vacuum seal the contents and place them in the freezer. They will stay fresh for up to 12 months.
