Indulgent cinnamon ice cream with fried apples, cookie crust, caramel, and walnuts. A decadent and elegant dessert that's sure to be a crowd-pleaser!
Ingredients:
  • 8 oatmeal cookies, crushed
  • 2 tablespoons melted butter, divided
  • 2 large apples, peeled, cored and sliced
  • 3 tablespoons white sugar
  • 3 cups whipping cream
  • 1.5 cups half and half
  • 1 cup white sugar
  • 3 eggs, beaten
  • 0.25 cup chopped toasted walnuts
  • 0.25 cup dulce de leche or caramel ice cream topping
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine crushed cookies and 1 tablespoon of melted butter until well mixed, then press onto a baking sheet. Bake in the preheated oven for 5 minutes. Remove from oven and let cool completely before crumbling.
  • Melt the last tablespoon of butter in a skillet over medium heat. Add apples, 3 tablespoons of sugar, and 1 teaspoon of cinnamon. Cook until apples are lightly browned and sugar starts to caramelize, around 10 minutes. Remove from heat and let cool completely.
  • In a large bowl, mix cream, half-and-half, 1 cup sugar, eggs, vanilla, and 2 teaspoons cinnamon until well combined. Transfer the mixture into an ice cream maker and freeze following the manufacturer's guidelines.
  • After the ice cream is ready, gently fold in crumbled cookies, caramelized apples, and walnuts. Drizzle teaspoons of dulce de leche while stirring to ensure even distribution.
