Delicious apple pie ice cream sandwiches utilize your freezer for a delectable treat.
Ingredients:
  • 1.25 litres vanilla ice-cream, softened
  • 400g can pie apple slices, chopped
  • 2.50 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • 24 thin oat biscuits
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing it generously and lining it with baking paper, leaving a 2cm overhang on the long sides.
  • Combine ice-cream, apples, cinnamon, and nutmeg in a bowl. Transfer mixture into prepared pan, smoothing the top. Cover with plastic wrap and freeze for 8 hours or until firm.
  • 1. Arrange 12 biscuits with their flat sides up on a board and lightly brush them with cold water. 2. Using a 6.5cm round cutter, cut out 12 rounds from the ice-cream mixture and place each round on top of the biscuits. 3. Brush the flat side of the remaining biscuits with cold water and sandwich the ice-cream between them. 4. Transfer the ice-cream sandwiches onto a large baking tray and freeze for 3 hours or until firm.
  • Allow the dish to thaw at room temperature for 15 minutes before serving.
