Apple Pie Sandwich Cookies

Apple cinnamon cream filling sandwiched between soft cookies creates a delectable treat.
Ingredients:
  • 3/4 cup butter, softened
  • 1 cup packed brown sugar
  • 1/4 cup light corn syrup
  • 1 egg
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon ground ginger
  • Dash of salt
  • 1/2 cup granulated sugar
  • 1 teaspoon butter
  • 1 medium apple, peeled and finely chopped (1 cup)
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 cup mascarpone cheese or 1 package (8 oz) cream cheese, softened
Instructions:
  • Preheat your oven to 350°F and generously spray 2 large cookie sheets with cooking spray.
  • In a spacious bowl, mix 3/4 cup of butter and 1 cup of brown sugar using an electric mixer on medium speed for 3 minutes until well combined. Scrape the sides of the bowl. Add corn syrup and an egg. Beat for 2 more minutes until everything is blended together.
  • In a medium bowl, whisk together the flour, baking soda, 1 teaspoon of cinnamon, ginger, and salt. Then, gently fold the dry ingredients into the butter mixture until just combined.
  • Spread granulated sugar on a plate. Roll 1 level tablespoon of dough into a 1-inch ball, coat with sugar, then place it on a cookie sheet. Gently flatten the ball to a 2-inch diameter with the palm of your hand. Repeat with the remaining dough to form a total of 44 balls, placing them 1 1/2 inches apart on the cookie sheets.
  • Bake until golden, about 15 minutes. Allow to cool on the cookie sheet for 1 to 2 minutes, then transfer to a wire rack to cool completely.
  • In an 8-inch skillet, melt 1 teaspoon of butter over gentle heat. Stir in the apple, 1 tablespoon of brown sugar, and 1/4 teaspoon of cinnamon. Cook while stirring often for 5 to 7 minutes until the apple becomes tender. Let it cool for about 15 minutes. Combine the cooled apple mixture with mascarpone in a small bowl.
  • Spread a generous layer of the delicious filling onto one cookie, then gently place another cookie on top to create a delectable sandwich. Continue this process with the rest of the filling and cookies. Chill in the refrigerator until ready to enjoy.
