Apple rose frangipane tart

Elevate your baking game with a stunning apple rose frangipane tart.
Ingredients:
  • 260g plain flour
  • 55g icing sugar mixture
  • 125g butter, chilled, chopped
  • 20.00 gm chilled water
  • 2 Free Range Egg yolks
  • 100g butter, extra, softened
  • 110g caster sugar
  • 1 Free Range Egg
  • 120g almond meal
  • 20.00 ml brandy or orange juice
  • 3 red apples or green apples (such as Jazz or Granny Smith)
  • 60ml lemon juice
  • 40.00 gm caster sugar
  • 0.63 gm ground cinnamon
Instructions:
  • In a food processor, combine 1 1/2 cups (225g) of flour with icing sugar and chopped butter until it resembles fine breadcrumbs. Add water and 1 egg yolk and process until the dough comes together. Transfer the dough to a floured surface, knead until smooth, then wrap in plastic and chill in the fridge for 30 minutes.
  • On a gently dusted surface, flatten the pastry into a 30 x 40cm rectangle. Cover a 12 x 34cm fluted tart tin with removable base with the pastry. Trim any excess using a small knife. Chill in the fridge for 15 mins to relax.
  • Preheat the oven to 200C. Line the pastry with baking paper and fill with pastry weights or rice. Bake for 10 minutes. Remove the paper and weights, then bake for an additional 8 minutes or until light golden. Reduce the oven temperature to 180C.
  • In a bowl, use an electric mixer to blend very soft butter and caster sugar until light and fluffy. Mix in the egg and extra egg yolk until well combined. Then, fold in almond meal, brandy or orange juice, and the rest of the flour. Spread this mixture over the pastry case.
  • Create elegant apple roses by coring apples using an apple corer and cutting them into 1mm-thick slices. Mix the slices in a bowl with lemon juice, caster sugar, and cinnamon and let them soften for 10 minutes. Roll 3-5 slices tightly and overlap them slightly to form roses. Place them on the tart, bake for 35-45 minutes until golden, and serve warm or at room temperature.
