Ingredients:
  • 3/4 cup fat-free (skim) milk
  • 1/4 cup canola or soybean oil
  • 1 teaspoon vanilla
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 medium unpeeled apple, finely chopped (1 cup)
  • 1 tablespoon sugar
  • 1/4 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 400°F, and generously grease the bottoms of 12 regular-size muffin cups with shortening, cooking spray, or line them with paper baking cups.
  • In a large bowl, whisk together milk, oil, vanilla, and egg until well combined. Add flour, 1/2 cup sugar, baking powder, salt, and 1/2 teaspoon cinnamon at once and gently mix until just moistened (batter will be lumpy). Stir in the apple. Divide batter evenly into muffin cups, then sprinkle topping mixture over each one.
  • Bake until golden brown, about 25 to 30 minutes. For greased pan, let cool in pan for 5 minutes, then transfer to cooling rack. For paper baking cups, immediately transfer to cooling rack. Serve warm, if desired.
