Apple sponge pudding

Indulge in warm apple pudding topped with smooth ice cream for a delightful autumn treat.
Ingredients:
  • 6 Granny Smith apples
  • 107.50 gm caster sugar
  • 40.00 gm water
  • 2 eggs, at room temperature
  • 4.40 gm vanilla essence
  • 75.00 gm self-raising flour
  • 1.25 gm mixed spice icing sugar, to serve
  • Ice-cream, to serve
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease a 5-cup ovenproof dish.
  • Peel, core, and dice apples, then combine in a saucepan with 1/4 cup of sugar and water. Simmer over medium heat, partially covered, for 5 to 8 minutes until apples are tender. Drain any excess liquid and transfer apples to a prepared dish, keeping them warm by covering.
  • Using an electric mixer, whip eggs until they are fluffy. Gradually add the remaining 1/4 cup of sugar, 1 tablespoon at a time, beating until the mixture is thick and creamy. Finish by stirring in the vanilla.
  • Gently sprinkle flour and mixed spice over batter, then using a metal spoon, carefully fold them in. Lastly, pour the mixture over the hot stewed apple.
  • Bake for 30 minutes or until a skewer inserted into the sponge comes out clean. Finish with a light dusting of icing sugar. Serve the warm pudding with a scoop of ice cream and a dollop of cream.
