Apple Sugar Cookie Streusel Bars

Apple cinnamon sugar cookie bars - a deliciously simple fall treat.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup cold butter, cut into pieces
  • 1 can (21 oz) more fruit apple pie filling (about 2 1/3 cups)
  • 1/2 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 375°F and generously coat a 9-inch square pan with cooking spray.
  • Place the cookie mix in a large bowl. Use a pastry blender or fork to cut in the butter until the mixture is crumbly. Do not overmix.
  • Set aside 1 1/2 cups of cookie mixture for the topping. Press the remaining mixture into the bottom of the pan and bake for 10 minutes.
  • In a small bowl, combine pie filling and cinnamon until fully mixed. Spread evenly over partially baked crust, then top with the reserved 1 1/2 cups cookie mixture.
  • Bake for 30-35 minutes until lightly golden brown, then let cool completely for about 4 hours. Cut into 4x4 rows and store covered in the refrigerator.
