Bake a heavenly apple tea cake and indulge in its irresistible fragrance and taste!
Ingredients:
  • 2 apples
  • 42.00 gm lemon juice
  • 5.00 gm ground cinnamon
  • 250g caster sugar
  • 250g unsalted butter
  • 250g self-raising flour
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C (356°F) without the fan. Grease and line the base of a 23cm (9 inch) springform cake pan.
  • Peel and core the apples, then cut them into segments. Gently coat the apple segments with lemon juice and sprinkle half of the cinnamon on them. Set aside for later.
  • Combine 50g sugar, butter, and flour in a bowl. Add the rest of the cinnamon and rub everything together using your fingertips.
  • In an electric beater, whip eggs and remaining sugar until extremely light and fluffy. Melt the rest of the butter and add it to the egg mixture. Sift in the remaining flour and gently fold until well combined.
  • Gently spread the apple slices over the mixture in the pan, then sprinkle with the crumble topping. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the dish to cool for 10 minutes, then transfer it to a wire rack to cool completely. Serve with a sprinkle of icing sugar.
