Enjoy a classic apple tea cake anytime.
Ingredients:
  • 150g butter, softened
  • 161.25 gm caster sugar
  • 4.40 gm vanilla extract
  • 2 eggs, at room temperature
  • 375.00 gm self-raising flour, sifted
  • 386.25 gm milk
  • 400g can pie apple (see note)
  • 300ml thick vanilla custard
  • 28.05 gm desiccated coconut
Instructions:
  • Preheat your oven to 160°C. Grease an 8cm deep, 22cm square cake pan. Line it with baking paper, leaving a 2cm overhang on two opposite ends.
  • With an electric mixer, blend butter, sugar, and vanilla until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Transfer mixture to a bigger bowl. Gently fold in flour and milk using a large metal spoon, alternating between the two until just combined.
  • In a prepared pan, evenly layer half of the batter. Place half of the apple slices on top, followed by dollops of half of the custard and a sprinkle of coconut. Carefully spread the remaining batter over the filling. Add the remaining apple slices and custard on top. Swirl the custard into the batter using a skewer. Bake for 1 hour 20 minutes to 1 hour 30 minutes until a skewer inserted into the center comes out clean. Allow the dish to cool completely in the pan before serving. Enjoy!
