Sausage roll maker custard and apple pies recipe

Effortlessly create individual apple pies with make-ahead custard for a quick and clean dessert experience.
Ingredients:
  • 20.00 gm custard powder
  • 250ml (1 cup) milk
  • 40.00 gm caster sugar
  • 800g can apple slices pie fruit
  • 3 sheets frozen puff pastry, just thawed
  • 40g butter, melted
  • Cinnamon sugar, to dust
Instructions:
  • In a small saucepan, combine custard powder and 2 tablespoons of milk, stirring until smooth. Add the remaining milk and sugar. Cook over medium-low heat, stirring constantly until the mixture boils and thickens for about 1 minute. Transfer to a bowl and let it cool for 5 minutes, stirring occasionally. Chill in the fridge for 15 minutes until set.
  • Drain excess liquid from the pie apple slices by placing them in a strainer over a bowl.
  • Cut the pastry sheets in half. Lay half over the base of a sausage roll maker and press gently into the 4 wells. Spoon 1 tablespoon of custard into each well and add a ¼ cup of pie apple onto each. Cover with the remaining pastry half. Close the lid, turn on the sausage roll maker, and cook for 10 minutes or until golden.
  • Finish cooking pies in the sausage roll maker until golden brown. Transfer pies to a wire rack and let them cool slightly. Use kitchen scissors to separate pies and trim pastry edges. Brush with butter and sprinkle with cinnamon sugar. Repeat with remaining ingredients for 2 more batches. Serve warm.
