Sausage roll maker chocolate eclairs recipe

Delicious cream-filled pastries made effortlessly in a sausage roll maker. A guaranteed crowd pleaser!
Ingredients:
  • 60g butter, chopped
  • 75g (1/2 cup) plain flour
  • 3 eggs, lightly beaten
  • 100g dark chocolate, melted
  • 24.00 gm icing sugar
  • 4.40 gm vanilla extract
Instructions:
  • In a small saucepan over medium heat, bring butter and 125ml (1/2 cup) of water to a boil. Add flour and stir until smooth and well-combined. Cook and stir for 2 minutes until the mixture forms a ball.
  • Using an electric mixer with the beater attachment, beat the mixture for 2 minutes to slightly cool. Add the egg in 3 batches, beating well after each addition until the mixture is smooth and glossy. Divide half of the mixture evenly among the wells of the sausage roll maker. Close the lid, turn on the sausage roll maker, and cook for 18 minutes or until golden brown. If some mixture oozes out, it's no problem.
  • Turn off the sausage roll maker and leave the lid open to allow the machine to cool slightly. Transfer the eclairs to a wire rack. Use kitchen scissors to separate the eclairs and trim the edges. Pierce a long hole through one end of each eclair to let steam escape. Repeat to make 4 more eclairs. Allow them to cool completely.
  • Dip the tops of the eclairs into melted chocolate, letting the excess drip off. Allow them to set for approximately 30 minutes. Whip cream, icing sugar, and vanilla with electric beaters until firm peaks form. Transfer the mixture to a piping bag with a 1cm plain nozzle. Fill each eclair by piping cream into the hole at the end. Serve chilled or at room temperature.
