Chai-spiced apple bread pudding with a sweet brown sugar twist, a flavorful and simple dessert.
Ingredients:
  • nonstick cooking spray
  • 8 cups cubed stale bread
  • 2.5 cups milk
  • 5 green cardamom pods
  • 0.75 teaspoon whole allspice berries
  • 0.125 teaspoon ground nutmeg
  • 6 tablespoons butter, divided
  • 1 large apple - peeled, cored, and chopped
  • 1.25 cups lightly packed brown sugar, divided
  • 0.25 teaspoon caramel extract
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously spray an 8-inch square baking dish with nonstick cooking spray. Fill the dish with cubed bread and set aside.
  • In a saucepan over medium-low heat, gently simmer milk, cardamom pods, allspice berries, cinnamon, and nutmeg for 5 minutes. Let it cool for 15 minutes, then strain the milk to remove the large spices.
  • In a saute pan over medium-high heat, melt 4 tablespoons of butter. Add apple and saute until tender, around 5 minutes. Remove from heat and mix in 1 cup of brown sugar, vanilla extract, and caramel extract until sugar is melted. Drizzle the mixture over bread cubes and toss to coat evenly.
  • Whisk together eggs and chilled, seasoned milk in a mixing bowl with an electric mixer. Pour the mixture over the bread, letting it soak for 10 to 15 minutes, gently pressing down on the bread cubes to ensure they absorb the liquid.
  • Sprinkle the remaining 1/4 cup brown sugar over the bread pudding. Melt the remaining butter in the microwave for 15 to 30 seconds, then drizzle it over the brown sugar.
  • Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center comes out clean. Serve warm or cold.
