Delight in this apple salad with cranberries and pecans – a perfect side.
Ingredients:
  • 2/3 cup sugar
  • 1/2 cup cider vinegar
  • 1/2 teaspoon salt
  • 2 tablespoons canola oil
  • 2 teaspoons grated gingerroot
  • 3 Braeburn apples, cored, thinly sliced into rings
  • 3 Granny Smith apples, cored, thinly sliced into rings
  • 1 cup dried cranberries or cherries
  • 1 cup coarsely chopped pecans, toasted
Instructions:
  • In a 1-quart saucepan, bring the sugar, vinegar, salt, and pepper to a boil. Let it boil for 1 minute, then remove from heat and allow to cool completely. Whisk in the oil and gingerroot until well combined.
  • Arrange the apple rings in a single layer in a large shallow glass dish. Drizzle the dressing over the apples and gently toss them to ensure they are well coated. Cover the dish and allow it to chill in the refrigerator for at least 2 hours, giving it a occasional gentle stir.
  • Arrange the apple rings on salad plates using a slotted spoon. Sprinkle cranberries and pecans evenly over the apples. Drizzle with any remaining dressing from the dish, if desired.
