Creamy Cranberry Salad

Delicious cranberry Jell-O salad with layers of creamy goodness, bursting with pineapple, orange, and apple flavors.
Ingredients:
  • 1 (6 ounce) package cherry-flavored gelatin mix (such as Jell-O®)
  • 0.75 cup boiling water
  • 1 (12 ounce) package fresh cranberries
  • 1 cup white sugar
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 cup chopped pecans
  • 0.75 cup orange juice
  • 1 medium apple with peel, grated
  • 1 cup whipping cream
Instructions:
  • Whisk gelatin into boiling water in a mixing bowl until fully dissolved. Allow to cool for approximately 5 minutes.
  • In a food processor, finely chop cranberries. Then add sugar and process until it dissolves completely.
  • Combine the cranberry mixture with the cooled gelatin, then mix in the pineapple, pecans, orange juice, and apple until fully incorporated. Chill in the refrigerator for 8 hours or overnight.
  • In a chilled glass or metal bowl, use an electric mixer to whip cream until soft peaks form. Slowly add cream cheese and continue to beat until combined.
  • In a glass serving dish, evenly spread half of the chilled cranberry mixture. Top with the fluffy whipped cream mixture, and finish by layering the rest of the cranberry mixture.
