Indulge in festive marzipan apple muffins - simple to bake and perfect for freezing.
Ingredients:
  • 1 pinch salt
  • 1 stick unsalted butter, at room temperature
  • 0.5 cup white sugar
  • 2 extra large eggs
  • 6 tablespoons milk
  • 2 teaspoons vanilla sugar
  • 1.25 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 medium tart apple, peeled and grated
  • 0.5 cup chopped almonds
  • 4 ounces marzipan, crumbled
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while preparing a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a bowl, cream together butter and sugar using an electric mixer until creamy. Add eggs one at a time, beating well after each addition. Stir in milk and vanilla extract.
  • In a small bowl, mix together flour, baking powder, and salt. Then gently incorporate the sifted mixture into the batter using a spatula. Finally, fold in the apples, almonds, and crumbled marzipan until evenly distributed.
  • Fill the muffin cups with the batter using a spoon.
  • Bake in the preheated oven for 15 to 20 minutes until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
