Apple-Spice-Oatmeal Cookies

Whip up these delightful spiced oat cookies for a lunchtime treat!
Ingredients:
  • 2 cups powdered sugar
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon vanilla
  • 1/4 cup half-and-half or milk
  • 1/2 cup butter or margarine, softened
  • 1/4 cup shortening
  • 1/2 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 cups old-fashioned oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 2 medium apples, peeled, chopped (2 cups)
  • 1 cup coarsely chopped walnuts
Instructions:
  • Preheat oven to 350°F. Stir glaze ingredients in a small bowl until smooth and easily drizzle-able. Cover and set aside.
  • In a large bowl, cream together 1/2 cup of butter, shortening, 1/2 cup of granulated sugar, and brown sugar using an electric mixer until well combined. Add eggs and 1 teaspoon of vanilla and mix until smooth. Fold in oats, cinnamon, nutmeg, baking soda, and flour until just combined, making sure to scrape the sides of the bowl. Gently mix in apples and walnuts.
  • Scoop cookie dough onto bare baking sheets using a rounded tablespoon (about scant 1/4 cup), spacing them 2 inches apart.
  • Bake for 13 to 17 minutes until edges turn golden brown and centers are firm. Let cool for 2 minutes, then transfer from cookie sheets to wire racks. Drizzle approximately 1 teaspoon of glaze onto each warm cookie using a spoon. Allow to cool entirely for about 10 minutes.
