Apricot bubble biscuits

Kid-friendly apricot biscuits with crispy rice bubbles.
Ingredients:
  • 150g butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla essence
  • 150g (1 cup) self-raising flour
  • 140g (1 cup) chopped dried apricots
  • 35g (1/4 cup) custard powder
  • 0.63 gm ground cinnamon
  • 105g (3 cups) Rice Bubbles
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • In a bowl, use an electric beater to whip together butter, sugar, and vanilla until pale and creamy. Incorporate the egg and mix until fully combined. Add in the flour, apricot, custard powder, and cinnamon, then stir until everything is well combined.
  • In a bowl, combine Rice Bubbles. Roll 1/2 tablespoon of the apricot mixture into a ball and coat it with the Rice Bubbles. Place on a lined tray. Repeat with the rest of the apricot mixture and Rice Bubbles. Space the balls 5cm apart on the lined trays.
  • Bake the biscuits in the oven for 20 minutes or until golden brown, then let them cool on a wire rack.
