Delicious and nutritious cookies perfect for lunches or parties.
Ingredients:
  • 250.00 ml dried apricots
  • 125.00 ml dried apple
  • 57.50 gm walnuts
  • 125.00 ml almonds (skin on)
  • 170.00 gm sultanas
  • 148.75 gm desiccated coconut
  • 395g can sweetened condensed milk
Instructions:
  • Preheat the oven to 180°C, and line 2 baking trays with baking paper. Cut the apricots and apple into small, even-sized pieces using kitchen scissors, then combine in a large bowl.
  • Combine walnuts and almonds in a food processor until coarsely chopped. Mix with apricots and apple. Add sultanas, 1 cup of coconut, and condensed milk, stirring until evenly mixed. Spread the remaining coconut in a shallow bowl.
  • With moistened hands, shape heaping tablespoonfuls of mixture into balls.
  • Roll the bumble bees in the remaining coconut. Place them on trays and bake for 15 to 20 minutes, swapping trays around in the oven after 10 minutes, until golden. Let them stand on trays for 1 minute, then transfer to a wire rack to cool completely. Serve.
