Festive Apricot Cream Cheese Thumbprint Cookies for a dazzling Christmas treat.
Ingredients:
  • 1.5 cups butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons lemon juice
  • 1.5 teaspoons lemon zest
  • 4.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 cup apricot preserves
  • 0.33333298563957 cup confectioners' sugar for decoration
Instructions:
  • Cream together butter, sugar, and cream cheese in a large bowl until smooth. Mix in eggs one at a time, then add lemon juice and zest. Stir in flour and baking powder until just combined. Chill covered for about 1 hour until firm.
  • Preheat the oven to 350 degrees F (175 degrees C). Roll dough into tablespoon-sized balls, space them 2 inches apart on ungreased cookie sheets. Press an indentation into each ball using your finger, then fill each with 1/2 teaspoon of apricot preserves.
  • Bake in the preheated oven until the edges turn golden, switching racks halfway through, for approximately 15 minutes. Let the cookies cool briefly on the baking sheets before transferring them to wire racks to cool completely. Dust with confectioner's sugar. Repeat with remaining dough.
