Cream cheese and preserves filled apricot crescent cookies - ideal for entertaining and festive gatherings.
Ingredients:
  • 1 cup unsalted butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 tablespoon sour cream
  • 2 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.25 teaspoon salt
  • 0.5 cup apricot preserves
  • 2 tablespoons powdered sugar, or to taste
Instructions:
  • Preheat the oven to 375°F (190°C).
  • In a large bowl, use an electric mixer to blend together butter, cream cheese, and sour cream until smooth. Add flour, 1/2 cup powdered sugar, and salt, and mix until fully combined.
  • Wrap the dough in waxed paper and refrigerate until firm for at least 3 hours or overnight.
  • Divide the dough into thirds and refrigerate while working on one portion at a time. Roll each portion into a 12 1/2x10-inch rectangle and cut into 2 1/2-inch squares using a fluted pastry wheel.
  • Place a generous dot, approximately 1/4 teaspoon, of preserves in the center of each square. Fold up two diagonal corners towards the center, pinching together firmly to seal or secure with a toothpick. Arrange on ungreased cookie sheets.
  • Bake in the oven until just firm, about 12 minutes, avoiding browning. Allow cooling on the baking sheet for 1 minute, then transfer to a wire rack to cool for 8 to 10 minutes. Finally, dust the cooled cookies with remaining powdered sugar.
