Elevate your morning with delightful apricot pikelets.
Ingredients:
  • 70g dried apricots, finely chopped
  • 62.50 gm boiling water
  • 250.00 ml plain flour
  • 0.63 gm bicarbonate of soda
  • 1 egg, lightly beaten
  • 195.00 gm buttermilk
  • 30g butter, melted
  • Whipped thickened cream, to serve
Instructions:
  • Place the apricots in a heatproof bowl and cover them with boiling water. Let them sit for 5 minutes until they soften and absorb all the water.
  • In a big bowl, sift together flour and bicarbonate of soda. Stir in sugar and create a well in the center. Add apricots, egg, and buttermilk. Gently fold with a metal spoon until just combined.
  • 1. Preheat a non-stick frying pan over gentle heat. Brush with luscious melted butter. 2. Spoon 1 tablespoon of batter for each pikelet onto the pan. Cook in batches for 1-2 minutes until tiny bubbles form on the surface. 3. Flip the pikelets and continue cooking for another 1-2 minutes until beautifully golden. 4. Transfer the pikelets to a plate and cover to maintain their warmth. 5. Repeat the process with the rest of the butter and batter.
  • Top your warm, fluffy pikelets with a dollop of creamy goodness.
