Nutritious dried fruit-packed pikelets make a delicious and fiber-rich lunchbox snack for kids.
Ingredients:
  • 150.00 gm self-raising flour
  • 20.00 gm caster sugar
  • 193.13 gm milk
  • 4.40 gm vanilla essence
  • 62.50 ml chopped dried apricots
  • 42.50 gm sultanas
  • olive oil cooking spray
  • 300.00 gm Nutella spread, to serve
Instructions:
  • In a large bowl, sift flour and sugar together, then create a well in the center. In a separate jug, whisk together milk, vanilla, and egg until fully combined.
  • Gently combine the milk mixture with the dry ingredients, then fold in the dried fruit carefully to avoid toughening the pikelets.
  • Preheat a non-stick frying pan over medium heat and lightly coat it with oil spray. Spoon tablespoonfuls of batter onto the pan, gently pressing to flatten. Cook for about 1 minute until small bubbles form on the surface. Flip and cook for another 30 seconds, until golden and cooked through. Transfer to a wire rack and continue with the rest of the batter.
  • Spread a generous amount of Nutella onto one slice of bread and place another slice on top to create a delicious sandwich.
