Indulge in delightful single-serve treats filled with nutty and fruity flavors.
Ingredients:
  • 1 cup walnut halves, toasted
  • 1 cup dried apricots
  • 1 cup pitted dates
  • 1/2 cup dried cherries
  • 1/2 cup water
  • 1/2 cup fresh orange juice
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon grated orange peel
  • 1 to 2 tablespoons unsweetened dark baking cocoa or 1 teaspoon instant espresso powder, if desired
  • 1/2 cup shredded coconut
  • 1/4 cup unsweetened dark baking cocoa
Instructions:
  • Using a food processor, pulse the walnuts until they are coarsely chopped, then transfer them to a large bowl.
  • Combine apricots, dates, cherries, water, and orange juice in a 1 1/2-quart saucepan. Bring to a boil, then cover and simmer for 10 minutes.
  • Use a slotted spoon to transfer the cooked fruit to a food processor, keeping the cooking liquid aside. Pulse the fruit until it forms a paste, adding some cooking liquid if needed. Add honey, cinnamon, orange peel, and optionally 1 to 2 tablespoons of cocoa; blend until well combined.
  • Combine the fruit mixture with the walnuts until evenly mixed. Shape the mixture into balls using about 1 rounded teaspoon for each; then coat the balls in either coconut or cocoa. Keep the treats in an airtight container for storage.
