Festive snowy twist on classic rocky road bites.
Ingredients:
  • 82.50 ml mixed dried fruit
  • 100.00 gm powdered milk
  • 75.00 gm icing sugar mixture
  • 42.50 gm desiccated coconut
  • 375.00 ml puffed rice cereal
  • 125g copha
  • 90g white chocolate, roughly chopped
  • 76g packet Turkish delight chocolate bar, roughly chopped
  • Silver cachous, to decorate
Instructions:
  • Line two 12-hole mini muffin pans with paper cases for easy removal later. Mix together dried fruit, powdered milk, sugar, coconut, and cereal in a heatproof bowl to create a flavorful base.
  • In a saucepan over medium heat, melt the copha for 4 to 5 minutes. Remove from heat and stir in the chocolate until combined. Add this mixture to the dried fruit and mix well before adding the Turkish delight. Stir until everything is well combined.
  • Quickly spoon the mixture into paper cases, then sprinkle cachous on top. Chill in the refrigerator for 2 hours or until set. Serve and enjoy.
