Indulge in bite-sized chocolate cheesecake bliss for a delightful dessert.
Ingredients:
  • 200g Granita biscuits
  • 100g butter, melted
  • 500g cream cheese, softened
  • 180g sour cream
  • 110g caster sugar
  • 3 Free Range Eggs
  • 2 tsp finely grated lime rind
  • 60ml lime juice
  • 100g white chocolate, coarsely chopped
  • 100g frozen raspberries
  • 100g white chocolate, extra, melted
Instructions:
  • Prepare your 16cm x 26cm slice pan by greasing and lining the base and sides, ensuring the lining extends over the edges.
  • Pulverize biscuits in a food processor until finely crushed. Blend in butter until fully incorporated. Transfer mixture into a pan, spreading and pressing with a glass. Chill in the fridge for 30 minutes before using.
  • Preheat oven to 150C. Blend cream cheese and sour cream in a food processor until smooth. Mix in sugar and eggs. Add lime rind and lime juice, blend until combined. Pour mixture over base, then sprinkle with chopped chocolate and raspberries. Bake for 25-30 mins until just set, then let cool in the oven with the door slightly open. Chill in the fridge for 2 hours before serving.
  • Invert the cheesecake onto a clean surface and slice into 3cm pieces. Put melted chocolate in a sealed plastic bag, snip off one corner, and drizzle over the pieces. Allow it to set for 5 minutes before serving.
