Almond and lime cupcakes with shaved white chocolate

Stylish almond cupcakes with a zesty lime twist and rich white chocolate.
Ingredients:
  • 125g butter, at room temperature
  • 175g caster sugar
  • 300g self-raising flour
  • 100g ground almonds
  • 125ml milk
  • 1 lime, rind grated and juiced
  • 240g Cadbury's Dream white chocolate
  • 185ml thickened cream
  • Red food colouring
  • Chocolate shavings, to sprinkle
Instructions:
  • Preheat your oven to 180°C. Line 12 muffin pans with paper cases. Beat 125g room temperature butter and 3/4 cup caster sugar until pale and creamy using an electric beater.
  • Add 2 eggs and mix well. Gently combine self-raising flour, ground almonds, milk, and lime. Transfer the batter to the prepared pans. Bake for 30 minutes until golden. Allow to cool fully.
  • Melt Cadbury's Dream white chocolate with thickened cream. Add a few drops of red food colouring until pale pink. Chill in the fridge for 1 1/2 hours. Whip until thickened. Frost cupcakes with the mixture. Create chocolate shavings using a vegetable peeler and sprinkle over the icing.
