Delicious lime and raspberry friands, ideal for a delightful afternoon treat!
Ingredients:
  • 125.00 ml plain flour
  • 225.00 gm icing sugar mixture
  • 20.00 ml finely grated lime rind
  • 133.00 gm almond meal (ground almonds)
  • 5 eggwhites
  • 200g butter, melted, cooled
  • 150g frozen raspberries
  • Icing sugar mixture, to dust
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced and get your 12-hole, 1/2 cup-capacity friand pan ready by greasing it. In a bowl, combine the sifted flour and sugar, then mix in the lime rind and almond meal. Create a well in the center of the mixture.
  • Lightly beat eggwhites with a fork in a bowl, then mix with butter into the flour until just combined. Gently fold in raspberries.
  • Fill the prepared pan holes three-quarters full with the mixture. Bake for 25 minutes or until a skewer inserted in the center of a friand comes out clean. Let it cool in the pan for 5 minutes, then transfer to a wire rack to cool. Serve by dusting with icing sugar.
