Indulge in the decadent Canadian butter tarts bursting with buttery sweetness!
Ingredients:
  • 45g (1/4 cup) sultanas
  • 2 sheets frozen shortcrust pastry, thawed
  • 70g (1/2 cup, firmly packed) brown sugar
  • 125ml (1/2 cup) maple syrup
  • 125g butter, melted, cooled slightly
Instructions:
  • Preheat your oven to 180°C/160°C fan forced. Grease twelve 80ml (1/3 cup capacity) muffin pans lightly. Place sultanas in a heatproof bowl and cover them with boiling water. Let them sit for 5 minutes, drain, and spread on a paper towel-lined plate to absorb any excess moisture.
  • Use a 9cm round cutter to cut out 12 pastry rounds. Carefully place the pastry rounds into the muffin pans and chill in the fridge for 10 minutes.
  • Combine eggs, sugar, maple syrup, and butter in a bowl and gently whisk until just combined, being careful not to overwhisk to avoid frothiness.
  • Distribute the sultanas evenly into the pastry cases. Pour the egg mixture evenly into the pastry cases. Bake for 20 minutes until the pastry turns golden. Expect the filling to rise and possibly overflow slightly, it will settle as it cools.
  • Allow the pan to cool for 10 minutes before transferring the dish to a wire rack. Serve warm or let it cool completely on the rack.
