12 homemade butter tarts with flaky crust, gooey filling of brown sugar, raisins, coconut, and walnuts.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup shortening
  • 5 tablespoons ice water
  • 0.5 cup chopped walnuts
  • 0.5 cup flaked coconut
  • 0.5 cup raisins
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 tablespoon hot water
  • 0.5 tablespoon butter, melted
  • 0.5 teaspoon vanilla extract
Instructions:
  • Prepare the crust by sifting flour and salt into a bowl. Incorporate shortening until pieces resemble peas. Gradually add ice water, 1 tablespoon at a time, and combine until dough forms. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin or tart pan, then spread walnuts and flaked coconut on a baking sheet with a rim.
  • Unwrap the dough and roll it out between two sheets of waxed paper. Using a round cutter, cut out 12 circles. Gently press one circle into each muffin cup. Evenly distribute the raisins among the crusts.
  • Toast walnuts and coconut in the preheated oven until golden brown, for 5 to 10 minutes. Once done, raise the oven temperature to 450 degrees F (230 degrees C).
  • In a bowl, vigorously combine brown sugar, egg, hot water, butter, and vanilla. Add walnuts and coconut, then carefully spoon the mixture into tart shells, ensuring they are filled no more than 2/3 full.
  • Bake until golden brown in the preheated oven for 10-12 minutes.
  • Take out of the oven and allow to cool fully before gently removing from the pan.
