Apple Butter Tart: A unique twist on a Canadian classic, these decadent treats boast rich apple flavor and a delightful texture, making them the perfect mini dessert.
Ingredients:
  • flour for dusting
  • 1 pound prepared pie crust
  • 2 cups apple juice
  • 0.75 cup packed brown sugar
  • 6 tablespoons unsalted butter
  • 1 large egg
  • 1 tablespoon whipping cream
  • 0.5 teaspoon vanilla extract
  • 0.5 cup chopped walnuts
Instructions:
  • Prepare by gathering all the ingredients together. Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a muffin tin with cooking spray.
  • Sprinkle flour on a clean countertop and roll the pie dough to 1/8 inch thick. Use a 4-inch round pastry cutter to cut out 12 circles.
  • Place the dough into a greased muffin tin and gently press it into the bottom and sides. Chill in the refrigerator while you make the filling.
  • Simmer apple juice in a saucepan over medium-high heat until thickened into 3 to 4 tablespoons of apple syrup. Set aside.
  • In a bowl, combine brown sugar and apple syrup. Mix in melted butter, egg, cream, vanilla, and salt. Whisk until filling is silky and well blended.
  • Remove the pastry from the fridge. Evenly distribute the walnuts on the bottom of the tart shells. Fill each tart shell about 2/3 full with the filling, then tap the pan to even out the filling.
  • Place in the preheated oven until the crust is golden and the filling is bubbling, around 20 minutes. Allow to cool for 10 minutes, then carefully remove from the muffin tins and serve while still warm.
