Apricot Riesling Jam

Create a lively apricot jam with a hint of Riesling wine for a deliciously tangy twist.
Ingredients:
  • 5 cups chopped apricots, pits discarded (see recipe note)
  • 2 3/4 cups sugar, divided
  • 1/3 cup Riesling or Gewürztraminer
  • 5 tablespoons lemon juice
Instructions:
  • Chill a pair of small plates in the freezer for testing the jam later on.
  • Combine apricots, sugar, wine, and lemon juice in a large stainless steel or enamel pot. Bring to a boil over medium-high heat.
  • As the mixture boils and rises, delicately skim off the pale yellow foam that forms at the top. Continue stirring gently to prevent sticking as the boil subsides to larger bubbles that still bubble vigorously.
  • To check the jam's consistency, spoon a small amount onto a chilled plate. Wait for 30 seconds, then swipe your finger through to observe the cooled texture. If a thicker jam is preferred, continue boiling for a few more minutes.
  • Carefully transfer the mixture into hot, sterilized canning jars, leaving 1/4 inch of head space. Wipe the rims of the jars clean, seal with lids, and let cool. Refrigerate the jam for up to 6 months.
