Apricot-Almond Pancakes

"Indulge in quick and delightful apricot-almond pancakes using Bisquick Heart Smart® mix for a sweet breakfast treat in just 30 minutes."
Ingredients:
  • 1 cup apricot jam or spreadable fruit
  • 2 cups Bisquick Heart Smart® mix
  • 1 cup fat-free (skim) milk
  • 1/2 teaspoon almond extract
  • 2 eggs, 4 egg whites or 1/2 cup fat-free egg product
  • 1/4 cup chopped almonds
Instructions:
  • In a small saucepan, gently warm the jam until it melts, stirring consistently. Keep it warm as you prepare the pancakes.
  • Mix all remaining ingredients in a medium bowl using a wire whisk or fork until well combined.
  • Prepare the griddle or skillet by brushing with vegetable oil or using cooking spray. Heat to 375°F or over medium heat.
  • Pour a generous amount of batter for each pancake onto a hot griddle. Cook until edges are dry, then flip and cook until golden brown on both sides. Serve with a dollop of warm apricot jam for absolute perfection.
