Cheesy spinach and artichoke dip enhanced with fresh herbs and Italian cheeses.
Ingredients:
  • 2 small yellow onions, chopped
  • 2 medium shallots, roughly chopped
  • 0.25 cup roughly chopped fresh Italian parsley
  • 0.25 cup chopped fresh chives
  • 0.25 cup chopped fresh sage
  • 2 cloves garlic, chopped
  • 1 (1 inch) piece fresh ginger, peeled and chopped
  • 4 sprigs fresh rosemary, leaves stripped
  • 1 (10 ounce) container Alfredo sauce
  • 0.5 (8 ounce) package cream cheese, softened and cut into pieces
  • 1.5 cups shredded Italian cheese blend
  • 1 (8 ounce) package fresh spinach, chopped
  • 1 (6.5 ounce) jar marinated artichoke hearts, drained and diced
Instructions:
  • Preheat your oven to 325°F (165°C).
  • In a food processor, blend onions, shallots, parsley, chives, sage, garlic, ginger, and rosemary leaves until combined. While the processor is running, slowly pour in olive oil until pureed.
  • Pour the pureed mixture into a large bowl. Combine with Alfredo sauce by whisking for about 3 minutes until fully mixed. Add cream cheese and whisk until smooth. Stir in Italian cheese, spinach, and artichokes until evenly combined. Transfer the mixture to a baking dish.
  • Bake in the oven until golden and bubbly, approximately 45 minutes.
